Canadian Cream Liqueur

A must for the holidays. None of the edible oil product and preservatives that the stuff from the store has. This cream liqueur is soooo delicious and soooo easy to make, you won't believe it. If it's not in my coffee, I like to have this delectable drink over coffee ice cubes. Yum!

Make the coffee ice cubes by pouring brewed coffee into ice cube trays or mini muffin tins. Freeze overnight. This step is optional but it is a match made in heaven.

I prefer Canadian rye whiskey to the more traditional Irish whiskey, but I may be biased. 

Combine the whipping cream and the condensed milk into a blender. Blend briefly to combine. 

Add the chocolate sauce, vanilla and almond extract.

Dissolve the instant coffee in a bit of warm water. Then add the whiskey. Blend till just combined.
That's it, your done!

Put it into pretty bottles. It makes a great gift. Store in the refrigerator, remember it has real cream and no preservatives. It should be consumed before the best before date of the cream. No pressure. 

Serve over coffee ice cubes. Enjoy!

1 can condensed milk
1 cup whipping cream
1 1/2 cups Canadian rye whiskey
1 teaspoon instant coffee
2 tablespoons chocolate syrup
1 teaspoon vanilla extract
1/2 teaspoon almond extract

2  cups strong coffee- poor into ice cube trays or mini muffin tins and freeze to make coffee ice cubes

Combine condensed milk and whipping cream into a blender. dissolve the coffee in a small amount of hot water, add coffee to the milk mixture. Add chocolate syrup, vanilla and almond extract. Lastly add the whiskey. Blend on medium until just combined.

You must be careful. Do not add the whiskey directly to the cream or it will curdle. Whipping the mixture to long will also make it curdle. Blend only until the mixture is combined

Adjust the amount of whiskey to suit your taste.

Refrigerate the mixture. It tastes better when it is left for a couple of days for the flavours to blend. Remember, this drink has real cream in it and no preservatives. Record the best before date of the cream. It should be consumed by then, no pressure.

Serve poured over coffee ice cubes. Delish!

Fresco Verdi(fresh green)Juice

Our very favourite green juice. So fresh and satisfying. The following combination of vegetables seems to go together so well. The amounts are just approximations. Play around with the amounts to suit your taste. 

This is my juicer the Omega VRT. It is a slow "masticating"type and it makes very good quality juice. If you are new to juicing, you may want to start with a juicer that is a little less expensive than the Omega. Some of the centrifugal juicers are affordable at about $50-$60. The Omega juices slowly and works better if the veggies are chopped up fairly fine. The centrifugal juicers are faster and do not need the veggies chopped up quite as fine. Do your research before you buy.

Start with good quality, fresh vegetables. Makes 2 large glasses.

3 apples
5 celery
1 large English cucumber
2 inches ginger
2 lemons or limes
4 cups packed spinach or kale 

If you are new to green juice, you may want to add one more apple. We like it just as is.

Chop your veggies as directed for your juicer. The celery and citrus must be cut into one inch pieces for the Omega. 
Put the fruit and veggies through the juicer, following manufactures guidelines.

This is the pulp. I put this directly into my compost pile. In about 6 months it will turn to compost and I will add it to my vegetable garden where I will grow the cucumbers and kale to make juice with. The circle of life in my little world.

Make sure to drink this slowly. Over the course of about 30min. You may develop abdominal discomfort,  if consumed too fast. 
It doesn't get much healthier than that. I try to buy organic produce, especially if I am going to eat the peel. 


Pina Colada Smoothy

(dairy free, refined sugar free and gluten free)

Our favorite green smoothy. Sometimes this all we have for supper.
It is calorie dense due to the avocado and coconut milk, so it stays with you. Jam packed with nutrition. It is so healthy.
Whether you're vegan, vegetarian, gluten free or omnivore this is for you.

Makes enough for two or three large glasses.

2 cups packed kale or spinach
2 cups frozen pineapple/mango mix
1 can coconut milk
1 avocado
1 ripe banana
2 or 3 dates(to taste)
1 tsp vanilla
coconut water for thinning, if necessary

Put first 7 ingredients into blender. Blend on high for about 3 minutes.if mixture is too thick to blend, add a bit of coconut water. This smoothy has the consistency of a very thick milk shake. The avocado lends a very smooth, pudding-like texture.

If you prefer a sweeter smoothy, add more dates. You cannot taste the dates, they just sweeten the mixture.
Make sure to read the labels. Choose frozen fruit with no added sugar. Choose coconut milk that has natural ingredients.
